I looked at Windows sound recorder, but it only allows 1 minute recordings, which is largely insufficient. Please help!

I personally think that would be totally fair--if you're not going to sell the recording and make money from it, I don't see what would be unethical about it. You've purchased the book and ought to be allowed to enjoy it as you like.
I have been left stymied by Media Player options and think that it is possible that I may have to go and buy an old cassette recorder to do this - that seems more than a bit bizarre!!
You can get free audio books at the public library. They have lots of books for the blind.
